High protein Warm Chicken Salad
(Recipe makes 2 servings)
Ingredients:
• 2 chicken breasts, no skin, cut into small pieces
• ½ small baguette, cut into small pieces (you can leave this out if you are watch...ing your carb intake)
• 2 tbsp olive oil
• 1 tbsp balsamic vinegar
• 150g bag mixed salad leaves
• 250g pack cooked beetroot, cut into small pieces
• 100g cottage cheese
Directions:
1. Heat oven to 200C/fan 180C/gas 6. Place the chunks of chicken and baguette on a shallow roasting tray. Drizzle with 1 tbsp olive oil and toss to ensure all the pieces have been coated. Season to your own preference, then put in the oven for 15 mins until the bread is golden in colour and chicken is cooked through.
2. Whisk together the olive oil that remains with the balsamic vinegar to make the dressing for the salad. Split the bag of leaves between two serving plates, add the beetroot pieces, then sprinkle the cheese over. Toss with the warm chicken and bread.
3. Pour over the dressing, then serve immediately.
