High protein Greek Tuna Salad
A light, refreshing high protein tuna salad which is packed with protein, colour and flavour.
Ingredients
1 cup romaine lettuce, torn
1/2 tomato, sliced into wedges
1 tbsp... white onion, diced
1/4 cup cucumber, chopped
1/2 can tuna packed in water
1 hard boiled egg, cut in half
For the dressing:
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano
Instructions
In a large bowl, add all of the salad ingredients.
In a small bowl, mix together the dressing ingredients.
Pour dressing over salad and toss until well combined. This salad serves one person.
