High Protein Broccoli and Chicken Salad

This recipe is full of fibre, antioxidants, calcium, and will help to provide you with a good dose of lean protein to support your lean mass-building goals.

Ingredients
1 cup Broccoli, cut into florets
1 Red Pepper...
1/2 cup Mandarin Orange segments
2 cups Spinach Leaves
2, 3 oz. grilled Chicken Breasts
1/8 cup Orange Juice
1 tsp. Lemon Juice
1 tsp. Dijon Mustard


Directions

 1. Cut the grilled chicken breasts into thin strips.
2. In a bowl, combine broccoli, red pepper, oranges, and spinach leaves with chicken and toss.
3. In another small bowl, combine lemon juice, red wine vinegar, orange juice, and Dijon mustard.
4. Once well mixed, drizzle over salad and toss one more time to coat.
5. Serve immediately.
